Omelette with spring onion


Prep time:5 min
Cook time:5 min
Serves:3-4


Ingredients:

4 eggs (at room temp for fluffy omelette)
2 tbsp milk
4-5 green chilies chopped
1 small onion, finely chopped
2 tbsp cilantro, chopped
2 stalks spring onion,chopped
6 tsps oil
Salt to taste

Method:
1. Heat a round nonstick pan over medium heat. Add 2 tsp oil.
2. When the oil is hot enough add chopped spring onion, green chillies,onion to it.fry for a min.While the onions are cooking, crack the eggs into a bowl. Beat them until they turn pale yellow color.
3. Remove onions from heat transfer them to the egg bowl beat well. Add salt and cilantro.
4. Divide the egg mixture into 3-4 single portions .Add a tsp oil for each omlette in to the pan.Let the eggs cook for up to a minute or until the bottom starts to set.
5. Now gently flip it over Cook for another 2 minutes.
6. Don’t overcook.
7. Gently transfer the finished omelette to a plate.

Enjoy it on top of a toast or on the side with rice and sambhar(lentil soup).
