Chudva/Atkulu

This is a healthy and filling snack.I usually make 2 versions of this snack. One is this version which tastes amazing when eaten instantly And the other one has long shelf life than this(will post that recipe soon).
Chudva
Ingredients:
4 cups very thin poha/atkulu
2 large garlic pods crushed
3-4 green chilis thinly sliced
1 small onion very thinly sliced(I prefer red onion)
2 tsp coriander seeds(dania)(optional)
1 sprig curry leaves
1 tbsp peanuts
1 tbsp dalia(putnalu)
2 tsp sesame seeds/nuvvulu(optional)
¼ tsp turmeric powder
¼ tsp red chili powder
Pinch of sugar
Salt to taste
2 tbsp oil for cooking

Method:
1.Heat the poha in a microwave safe bowl for 2 min, stirring after one minute or heat them over the stove in non stick pan till they curl up a little bit(takes 3-5 minutes).Keep them aside.

2.In a non stick pan.Heat the oil on medium heat.

3.Saute peanuts and dalia separately till they are light golden color.(I usually take them out and keep aside,because I am always afraid they will burn)

4.Now add garlic after a few seconds add mustard and cumin seeds once they splutter add coriander seeds and sesame seeds sauté for 30seconds.Add green chilies ,curry leaves and onion. Cook till they are light brown and crispy.

5.Now add turmeric powder,salt,red chili powder fry for 30 seconds

6.Now add poha keep stirring until poha turns into yellow in color.sprinkle some sugar.Add sauteed peanuts and dalia.Mix well.Switch off the stove

7.Allow the chudva to cool down before storing in a air tight container.


Note:
Heating up the poha is an important step to get crispy chudva
