Aloo fry/Potato stir fry/bangaladumpa vepudu

This is our all-time favorite stir fry as potatoes are easily available here in any grocery store, it is tasty and easy to make.My mom used to make this very often along with rice and pappucharu(sambhar).
Potato stir fry
Prep time:5 minutes
Cook time:25 min
Serves:2-3

Ingredients:
3 medium potatoes(peeled and cubed and put in the salted water)
3 green chilies
1 sprig curry leaves
1 tbsp chopped coriender leaves
1 tsp ginger garlic paste
1/2 tsp red chilli powder
1 tsp coriender powder
1/2 tsp mustard and zeera each
1 tbsp oil

Method:
1.In a non-stick wide pan heat oil,once hot add zeera and mustard.Let them sizzle.
2.Add green chillies,ginger garlic paste fry for 2 min,add curry leaves,then add turmeric powder, fry for 30 seconds.
3.Add potato pieces,saute on high for 2-3 minutes,add salt and close the lid.Cook till they are almost done on medium flame.
Stir in between.
4.Now add red chilli powder,coriander powder.fry for 3-4 minutes on high without the lid. until they turn golden brown.
5.Garnish with coriender leaves
6.Tastes good if served immediately

TIP:
Keeping potatoes in salty water not only helps them from turning brown after peeling and cutting,but also helps to get crispy.
